Most French nouns form the plural with -s, just like English. The difference is that the French -s is silent: chat and chats sound exactly the same. In speech, the article does the work: le chat [lə ʃa], les chats [le ʃa].

The -al → -aux change is a plural you can actually hear: un journal [ʒuʁnal], des journaux [ʒuʁno]. A few -al nouns just add -s, among them le festival → les festivals (think of the Festival d'Avignon) and le carnaval → les carnavals.
The last three pluralise both halves, because mon + sieur became mes + sieurs. You will hear Mesdames et messieurs at the start of every announcement on a TGV.
The article changes with the noun: le / la / l' → les, un / une → des. English speakers who rely on hearing an -s will miss plurals in French; listen to the article instead.
