Modern standard Hindi is based on खड़ी बोली, the speech of the Delhi region. The other varieties are not corruptions of it; several have older literary traditions than the standard does.

Different auxiliaries (बा and हउवे in Bhojpuri where standard has है), different pronouns, and a different vowel colour. The grammar you have learned still carries you a long way.
Speakers switch: standard at work, dialect at home. Treating a dialect form as a mistake is both wrong and impolite.
